Rice noodles and Chinese wok

This is an easy lunch/ dinner dish and serves 2.

INGREDIENTS:

100g Rice noodles

1 bunch of Pak Choi

1/2 a Broccoli

1 Chicken breasts

2 tbsp of Soy sauce

1 tbsp Honey

1 crushed clove of Garlic

1 tbsp coconut oil

1 tsp Sesame oil

a sprinkle of sesame

METHOD:

1) In a wok/ big pan add 1 tbs of coconut oil, 1 tbsp of soy sauce, 1 tbsp of honey, your crushed garlic and lets it simmer a couple of minutes. In the meantime chop your chicken into small bite size pieces (this will speed up the cooking time and even it out)

2) Before the garlic starts browning add in the chicken and cook on a medium heat (2-3 mins) then add in the chopped pan choi, broccoli, 1 tbsp soy sauce, then put a  lid on it and let it steam 2-3 mins. If the vegetables are cooked to your satisfaction turn off the heat and keep the wok covered on top so the heat doesn’t escape.

3) in a pot bring your water to a boil and add your rice noodles in, they typically take 2-3 minutes to cook. Now drain the water out and add, 1 tsp sesame oil, and a sprinkle of sesame seeds. Mix mix mix.

5) Now dish up to eat straight away or store away in Tupperware boxes for the week ahead!
